• 1 pound chicken
  • 1/2 cup peeled and diced potatoes
  • 3 tablespoons masaman curry
  • 2 cups coconut milk
  • 1/4 cup roasted peanuts
  • 2 bay leaveds
  • 3 cardamons
  • 2 table spoons vegetable oil
  • 1/4 cup palm sugar
  • 3-4 table spoons fish sauce (nam pla)
  • 11/2 tablespoons tamarind paste

preparation:

  1. cut chicken into 1 inch cubes
  2. in sauce pan heat oil, add paste on high heat.
  3. add chicken , potato, onion, coconutmilk, fishsauce, palm sugar, tamarind paste,bay leaves,cardamon and roasted peanuts
  4. simmer until the cicken and potatoes are well cooked
  5. remove from heat
  6. serve with rice
