• 100 gram dried rice noodle, pre soaked in warm water until soft, drained *
  • 5 medium sized prawns ( i prefer tiger prawns) peeled and removed the black
  • 2 table spoons vegetable oil *
  • 1/4 cup chive or green onion cut into 3 cm
  • 1 table spoon palm sugar or brown sugar *
  • 2 teaspoons fish sauce *
  • 1 egg
  • 1/4 cup raw beans sprouts
  • 1 table spoon garlic minced *
  • 1/3 cup tofu extra firm cut into 1 cm cubes
  • 1 table spoon tamarind paste or white vinegar *
  • 1 table spoon pickled white radish
  • 1 table spoon ground roasted peanut or roasted cashew nuts
  • 1/2 tea spoon chillie powder
  • 1/2 lime

Fried Noodles Thai style,

 

In Thai cooking meat, seafood or vegetables can be changed because these ingredients are just your choic. They add texture, color, flavor, and decoration. But the most important thing in thai cooking is the seasoning and key ingredients. This will bring your dish to life and gives an amazing aroma / flavor . The ingredients marked with a star (*) are KEY so they have to be in the dish.

 

Preperation :

  1. heat oil over low heat in wok, add garlic and fry until fragrant
  2. add prawns, tofu, beansprouts, chives and stir until prawns are cooked
  3. break a egg straight into the wok, stir rapidly until it becomes scrambled and dry
  4. add noodles and season with fish sauce, palm sugar, ground roasted peanut, ground dried red chilies
  5. add tamarind paste and pickled white radish.
  6. mix everything together and keep frying and stirring
  7. when noodles become softened and translucent, switch off the gas
  8. serve with fresh vegetables ( bean sprouts, chives, green onions)
  9. topping with roasted peanut and chili powder
  10. place a lime for the guest to squeeze over the pad Thai.
