• 6 - 8 large Prawns pinch of salt & pepper to marinate
  • 1 teaspoon of corn flour
  • 2 cups cooking oil for deep frying the prawns
  • 1 tablespoon of butter
  • 3 salted duck eggs [hard-boiled, remove shell, chopped the white and the yolk separately]
  • 5 bird eyes chillies [chilli padi] chopped
  • 3 - 5 stalks of curry leaves
  • little brown sugar to taste
  • * Optional : half cup milk for creamy texture

Salted Egg Prawns

Method – Part I
1. wash, trimmed & devein prawns
2. season with salt & pepper
3. heat oil for deep frying
4. once oil is hot, stir in 1 teaspoon of corn flour to prawns … deep fry immediately and quickly removed once prawns shell turn reddish orange in color means prawns is cook

Method – Part II
1. in a clean work, melt the butter
2. add chopped egg yolk and fry till bubbling
3. add the chopped egg white and a little sugar to taste
4. add in chopped bird eyes chillies and curry leaves
5. lastly add in the fried prawns, give it a quick toss and served hot
5.1 *optional : may add in half cup milk if prefer a creamy sauce texture
5.2 *optional : may serve with iceberg lettuce by side, to wrap the dry egg mix.
