- 1 big eggplant
- 1 chopped fresh onion (preferably the red onion)
- t tsp ginger finely chopped (or paste)
- 4 table spoons vinegar
- 1 tbsp brown sugar
- pepper and salt to taste
I am so lucky i am married to a Filipina ..the people are really wonderful! not only their hospitality but also their food is really good. one of my favorits is the grilled eggplant salad. We eat it mostly with garlic rice and Adobo pork (adobo will post another time) but it will taste good with almost every main dish. It is simple yet very tasteful !
Grill the eggplant above fire ( if not available my wife just grills it above the stove )
mix all the ingredients together but the eggplant the last minute so it doesn’t become pulp.
Chill for 2-3 hours
