Summer,bbq,meat….and what belongs on that table more then a good sauce with your bbq. Just forget the boring cocktail sauce or ketchup.. Here is smoked Garlic dip. Good with grilled meats,fish or dip for exellent sauce just try it. Just takes a little bit of skill to smoke the garlic

Smoked Garlic Dip

sauce for grilled meats,fish or dip for chips…it is up to your imagination
  • 1 water 210 gram
  • 1 smoked garlic 26 gram
  • 1 bourgionne mix 8 gram
  • 1 seasalt 8 gram
  • 1 sugar 38 gram
  • 2 mayonnaise 500 gram
  • 2 chives cut 4 gram
  • 2 green lime rasp 4 gram
  1. Find an old pan and an old strainer that fits great. chop the garlic and put it into the strainer. cover the bottom of the pan with beech tree flakes ( you can buy those at your local bbq store or cooking shop). Hang the strainer in the pan and cover with aluminium foil so no smoke can escape. Put stove on high fire for 1 minute..then 15 min on low heat. Check after if your garlic is brownish smoked or still white ..if white then smoke a little bit more.
  2. Mix (1) together and then add number 2.

tip : smoke more garlic at once so you don’t need to do this every time you like to make this sauce. Just pack in freezer bags and freeze it for your next dip
