The Antilles in the Caribbean was once part of the Netherlands, Although independent The Netherlands still has great sayings in the Dutch Antilles also called the ” ABC islands ”  Aruba, Bonnaire, Curacao  . Carribean style dishes has entered the Netherlands and widely accepted through out the cooking culture in the Netherlands. Here is a soup recipe of a caribbean style chicken soup.

Caribbean Chicken soup is a tasty soup for either served as an entree or main meal
Ingredients
  • 300 gram soup chicken (1)
  • 700 gram Chicken stock (1)
  • 2 pc. clove (1)
  • 2 pc. bay leaves (1)
  • 10 gram chopped fresh ginger (2)
  • 2 gram kurkuma (1)
  • 1/2 chopped hotpepper ( or add to taste) (2)
  • 1 onion chopped (2)
  • 3 gram curry powder (1)
  • 2 gram black pepper(1)
  • 10 gram cream butter (2)
  • 1 clove garlic chopped (2)
  • 10 gram flour (2)
  • 10 gram sea salt (2)
  • 125 gram chick peas (soaked overnight) (3)
  • 50 gram cooking cream (3)
  • 10 gram dried cocos (3)
  • 20 gram coco cream (3)
Instructions
  1. (1) cook all these ingredients 1 day before (2 hours approx.) Chill down overnight and separate the chicken from the stock .Strip the chicken of his meat (2) fry butter and herb and spices add rest of (2).Add cold stock and cook for 5 minutes. Add (3) and cook for 30 min. Use your chicken meat in the soup when serving.
